Beetroot Leaves - What to do with them?

Another load of beetroot came in the veg box this week with leaves and stalks attached. Instead of throwing them in the compost, I kept them in the fridge.

Other than salad, are there any delicious ways you can cook and eat them please?

I got loads (and carrot tops) in the veg box this week and I'm afraid I just chucked them all in the food bin because I couldn't face eating so much roughage!

I sometimes make carrot top Sabzi which would work for this (google the recipe) but if I'm totally honest I'm the only one in the house who eats it!

I make Risotto with them, add tons of cheese & lemon zest

Add to other stir fried veg, or stir fry on their own with plenty of garlic

Managed to use up most of the leaves and stalks by making double quantity of that recipe, and could have added the rest in.

It was delicious.

Look up Antonio Carluccio's recipe for pasta with potatoes and cabbage and use the beetroot leaves instead.
Chop them and add to minestrone style vegetable soup.
