Just wondered if anyone had any recipes for leftover creme fraiche, cream cheese, mascarpone and ricotta etc. Whenever I buy them I rarely use the full tub so looking for new ways to use them up.

Current recipes I have on my “use up” list are…

Mascarpone
Lemony 'Nduja and Mascarpone Risotto

Ricotta
Crispy Gnocchi with Roasted Peppers, Chilli, Rosemary and Ricotta* *

Creme Fraiche
Ravioli with Lemon and Asparagus
Spinach and Mushroom Gnocchi

Cream Cheese
Salmon Fillets with Cauliflower Cheese Topping

I think they should all freeze well. Measure smaller bits into ziplock bags.

I just add these into any sauce - tomato pasta, spinach & mushroom pasta, stroganoff type sauce, curry even for some (not ricotta?)

Add icing sugar to mascarpone and serve with literally any fruit or cake.

Creme fraiche lasts well beyond its date. Just checked mine & it's 2 weeks over & still fine.

I make a lovely lemon, parsley and dill sauce for salmon out of anything white in the fridge at that time. Changes but basically anything in your list is fair game plus juice of 1/2 lemon, salt, dried parsley and dried dill. Super simple and delicious!
