receipes/things to do with home grown vegetables gluts

Could do with some new ideas on how to cook my gluts from the allotment. Some suggestions from me are frying lettuce with garlic/soya; courgette fritters (grated courgette/egg/flour/egg with flavouring such as garlic fried); french beans boiled and then added to fried streaky bacon/onions and a dash of cream.

Please help me make vegetables more exciting with minimal effort as we get bored eating same thing each day during gluts.

We don't have our own glut but usually benefit from a glut of courgettes from our neighbour. We slice them fairly thinly and fry them slowly in olive oil then once they're softish and starting to brown add lots of garlic, lemon zest and chilli flakes and serve on spaghetti with feta cheese. delicious and we have it often during the glut season.

Kale salad that a friend introduced me to has been great for their Kale glut this year:

Very finely chop the kale. Massage the kale with a generous amount of olive oil and lemon juice (I don't know why, but the massaging is an important step and without it the salad doesn't work). Add 1 or 2 finely chopped garlic cloves, about the same each of parmesan shavings and flaked almonds and combine. Season with salt and more olive oil and lemon.

We had this salad about 10 times in 2 weeks a little while ago!
