You just cannot beat scrambled egg on toast!

This is what we all had here for lunch. Simple, filling and delicious.

Scrambled eggs with bits of smoked salmon in it on toast, one of my favourite breakfasts.

Or toast, mashed up avocado, slice of black pudding, poached egg with a drizzle of olive oil and a few flakes of dried chilli. Heaven.

Prefer Vegemite but that reservation aside, food of the gods. The best bread base ever was the Duchy muffins from Waitrose but they don't sell those anymore 😥

Scrambled tofu! Mash up then cook for a couple of minutes in a pan, add a bit of water, nutritional yeast, garlic, turmeric, herbs ( always including chives) and pepper. Fabulous. But if you must have eggs, big plastic microwave safe bowl, beat two eggs, add a dash of milk and pepper/ herbs/ cheese/ nutritional yeast as desired and cook on high for a minute or two. No messy cooked on pan to deal with!

Just make sure yolks are well mixed in and everything's beaten well so they don't explode!

Cheese on toast topped with a poached egg takes me back to my childhood. It’s what we were given if we’d been ill.

Sardines on toast beats all the various types of eggs on toast!

I make scrambled eggs in a small non-stick frying pan. Plenty of butter. Pan is very easy to clean. I like to cook them slowly over low heat so they stay creamy, but that's still only about 5 minutes. Baffled by how anybody could say they're a faff because of all the stirring.

I wish I could poach an egg properly 😢

I have never poached an egg. Never even tried. Kids love scrambled egg or omelette, my fave would be a soft boiled egg with soldiers dipped in. I actually think I might have that this morning for breakfast now I think of it. Set me up for the day.

Especially if accompanied by smoked salmon 😋

Lordy I haven't had sardines on toast for years. Just checked the cupboard- there's a tin of the tomato ones (my favourite) with no used-by date. AND a tin of herring in mustard with no dates.

Not that keen on scrambled eggs. Ds1 likes them. I prefer smoked salmon, cream cheese and bagel. Or toast, tinned tomatoes, Worcester sauce and a poached egg.
