We would like to try to eat more fish, but I don't know many fish recipes.

Please could you share the fish recipes you enjoy?

Sea bream is a great fish to eat whole, tasty and doesn't get dry easily. I use something like this although one fish per person is on the high side given they usually weigh about a pound. I also brown them on the stove top first and add onion slices into the cavity. Similarvworks for other fish - loup de mer, trout...

As to other fish - if you can get really fresh tuna it's great as a ceviche (marinated in lemon juice) or simply as is - cubed and mixed with avocado and mango pieces and coriander, or put a sweet-and-sour mango sauce over it.

Salmon filled - brown the fleshy side in a skillet, turn then brush with white miso mixed with a bit of soy, then bake for 10-15 minutes or just covered on the stove top.

This is the easiest way to cook sea bream and the lemon and parsley brings out the flavour of a great fresh fish

Salmon is lovely done in foil parcels with Asian type flavours - you can try different combinations out to see how you like it but fresh ginger grated or cut into matchsticks, chilli, lime juice, coriander, garlic, soy sauce all nice. I serve with stir fried veg and maybe noodles or rice.

Do you like prawns? If so cook some orzo (or pasta of choice really), and about 5 mins before end add frozen peas. In another pan cook the prawns through in garlic oil - add extra garlic if you like it. Take off heat, stir through a little bit of butter, juice of a lemon, some chopped parsley - then combine with the orzo and peas. Takes less than 10 mins and really tasty.

Easy ones:

coat salmon with sweet chilli sauce, lime and soy and roast for 20-25 mins. Serve with rice or new potatoes and fresh veg or salad

coat cod, haddock or hake steaks with an olive and sun dried tomatoe tapenade and roast for 20-25 mins. Serve as above

wrap salmon in tin foil parcel with very finely sliced red onion or shallot, very finely sliced fennel, fresh dill and slces of lemon, a splash of wine and knob of butter. Bake for 30 mins.

Shallow fry tuna steaks in butter. Squeeze with lime and a sprinkling of pul biber or other mild chilli flakes. Serve with chips or rice and salad

Fussy but lovely: flat fillets like sea bream - toast some fresh mild spice seeds e.g. coriander, fennel, green or pink peppercorns, cumin, or caraway - or any combination of them, then grind to a powder. Mix with some cornflour.
Make a very thin mix of cornflour and lemon juice and water. Dip the fillets in then dip them in the dry spice flour mix. Shallow fry in a mix of butter and oil.
Serve with herbed rice and steamed green veg

Smoked haddock kedgeree: fry sliced onions, add mild curry powder and a teaspoonful of tumeric and a mugful of rice, then enough boiling water or veg stock to cook the rice, add chunks of smoked fish and cook until opaque and rice has absorbed water. Stir in petits pois or peas, finely chopped parley, a knob of butter and chopped freshly boiled eggs. Sprinkle with sweet smoky paprika and fresh squeezed lemon

Fish o'leekie is a bit different, quick and easy. My kids used to love it when they were little. Reminds me it's time to make it again!
