Help me to use up my eggs

I’ve got blooming loads of eggs and we are going on holiday at the weekend. I know you can freeze them but I’d love to use up as many as I can.
I’ve told the kids and DH we are having scrambled for breakfast everyday but what else can I do?
I can’t face making pastry for egg custard but other dessert ideas would be great. I’ve got loads of milk too if that helps.

Make a crustless custard tart/pudding thing, am sure I did one when I was on slimming world.

Also crustless quiche is fab, much less faff and if you buy the paper cake tin liners (£2 for 25 in Morrisons recently) there is no messy, eggy tin to clean and no trying to prise the quiche out. I just lift the whole thing out of the tin, leave to cool for 5 mins then peel the paper off.

Smoked haddock omelette is very luxurious for dinner. I use a big frying pan, 6 eggs, 200gish of fish. Cook fish, flake, add to omelette, cover with mature cheddar, cook bottom of omelette then finish off under the grill, cut into slices and serve.

Tortilla is fab for a picnic depending where you are going on holiday. And I reckon quiche would freeze really well for when you come home and want something quick and easy.

Meringue with the whites, and scrambled eggs with the yolks & and extra egg.
My 20yo did this with my last 5 eggs last week!

Carbonara, spanish omelette, quiche lorraine… you could make little savoury muffins with the eggs and freeze them

Tortilla (with potato) or frittata (with pasta) - mix cooked carbs with cheese and veg, cook til brown and crispy on outside

Meringue for egg whites and then a gateau breton for the egg yolks. Discovered that cake by accident and sooooo glad I did!

Egg muffins (basically just beaten egg with veg chopped into it, poured 8n to muffin cases, baked till cooked. Can be frozen and reheated when you want the,.

How many eggs do you need to use up?

Buy a pre-baked pastry dish and then make this recipe which I've used multiple times. I just use the 4 yolks in the lemon and 4 whites in the meringue- I don't bother with the extra egg. Also made it without the orange juice:

Baked egg custard (custard tart without the pastry basically).
If you have bread to use up, you could make bread and butter pudding or queen of puddings.

Not pudding but i don't think you can beat egg mayo sandwiches

meringues as they keep for a long time in an airtight container so will be fine when you return from holiday

use the yolks to make ice cream

add meringues with ice cream and serve for pudding

or make these egg yolk cookies and freeze the dough ready for your return from holiday and then bake
