I've actually got avocado and bread in the bag too and lime and chilli at home so maybe some posh avocado toast could work

One of my favourite smoked salmon dishes is avocado & smoked salmon with ponzu dipping sauce. A simple Ponzu is soy sauce with a citrus juice added, I serve it with Japanese pickled ginger, and sliced radishes.

Another way is on wholemeal bread with pickled beetroot and sour cream, and thinly sliced cucumber.

I did a lovely version of kedgeree with smoked salmon. I put some cooked peas in it too, which made a good addition.
