.... DH loves them, I don't. I'll cook & eat them occasionally (good little wifey that I am), but they have to be ultra-high meat content - Sainsbo's best.
There are no "local butchers" to provide a decent alternative.

I usually have them with the usual English suspects, (spuds, greenery, onion gravy), or skin them, make into meatballs & serve with pasta & an Italian sauce.

I think my problem is I'm cooking something I'd prefer not to eat.
(BTW, I eat brains, sweetbreads, etc)
Please give me some inspiration for international cuisine !

Cassoulet - I use sainsbury’s ‘cheats sausage cassoulet’. I also use their Boston baked beans with sausages recipe.

There's plenty of variety in the world of sausages. Would DH go for bratwurst, black pudding, cooking chorizo or haggis?

He eats all of those, & I love bp & chorizo.
It's the English banger that's the stumbling block

Why do you cook and eat something you do not like? Sod 'inspiration', just make something you like and he can have a sausage sandwich sometime when he wants one.

Do you bake fry them? I've always baked my sausages for ease and less mess. If the oven is on anyway just shove something else on.

I've seen on here you can cook and then freeze sausages then warm them up again to serve. Why not just have a batch in the freezer then do your own thing live on the day as needed?

I serve my sausages in a creamy mushroom sauce or chopped veg in tomatoy sauce with Parmesan grated on top. Easy to swap out the meat for yourselve if needed.

I saw this on tik tok and have made it so many times since, it's a hit in my house

Take the sausages out of the skin, fry off and squash them around so it resembles mince and put to one side.

To the same pan add a good sized tsblespoon of butter, 6 (yes) cloves of garlic and one small diced onion

Add chilli powder to taste (I use 1sp, original recipe said 3 but was too hot for me) salt and pepper. Recipe called for chili flakes but I didn't have them and haven't used them I've always been fine with powder.

Can of chopped tomatoes, put sausage meat back in, and simmer for 20 minutes

Meanwhile boil pasta. when done add pasta water and a generous amount of grated Parmesan to the sauce.

Usually I serve it with garlic bread. Please give it a go it's delicious!!

Sounds like our household, I am not a big fan but they are my OH favourite so I do tend to do them for him once a week.

I find sausage and mash a bit boring, these are some things that I've enjoyed. We also like to do a jambalaya, sausage kebabs, hunters sausage (like hunters chicken with the bbq sauce but using sausage) and I'll sometimes do a toad in the hole or a full English. If I'm feeling really lazy we'll just have some sausage sandwiches on sub rolls. They're also nice on pizza.

No judgment but I'm interested in what it is about sausages you don't like when you seem to like other meaty products?

I would have a couple of slices of good bacon whilst he has sausages.
I don't like sausages much these days, especially gluten free. I like bacon but a fry up breakfast is a bit too much grease so I have it with other things.

If you like chorizo, make choripan - BBQ or oven bake chorizo cut into sausage sized pieces, serve on a bread roll, with salsa criolla (like a fresh salsa - tomatoes, onions, garlic, peppers, coriander finely diced, bit of olive oil/vinegar/lime juice/salt&pepper).
