What fruit would you choose instead ?

I'm baking Chetna Makans coconut, cardamom and mango cake next weekend but finding fresh mango where I am is proving difficult!

I could at a very last resort get frozen mango but think fresh fruit would be so much nicer.

Would raspberries work do you think?

Can you buy tinned?

Plump82 · 25/06/2023 19:47

Oh there's an idea. I hadn't even thought of that to be honest.

If you want fresh fruit, I'd have thought peaches would be the most similar.

WeirdPookah · 26/06/2023 08:16

Frozen mango isn't as nice. If you want fresh fruit, I agree with peaches or nectarines.

Tinned fruit will be wetter if you go that route, drain well, and maybe a little less liquid if there is added ones in the recipe.

No idea where to get the mango but wow that cake sounds delicious! Do you have a link to a recipe please?

Im really looking forward to giving it a go.

Peaches sounds like a great idea if I don't manage mango.

Mango, cardamom and coconut cake

Chetna Makan brings together coconut, cardamom and fresh mango to make a lovely celebration cake that looks beautiful and tastes brilliant, too.

DD is a bit of a Mango fiend, she swears that M&S sell the best followed by our local Asian shop. Do you have either of those close by?

Plump82 · 27/06/2023 09:07

I've got an M&S but unfortunately no Asian shops near by which is real shame. Ill pop into M&S and see what they have!

Are you in the UK? I'd just look at a different supermarket. I'm in the ass end of nowhere (Cornwall, but not a nice touristy bit) and I get mango every week. You should have no trouble getting fresh mango at nearly any large supermarket in the UK.

That said, yes, frozen would probably be fine (I also use it often in smoothies and puddings) but it tends to not be as sweet so you'll need to adjust the sweetness.

I am in the UK but where I live doesn't have much choice at all. Only Tesco, Asda and a small M&S food hall. I haven't bought anything yet as I'm after fresh so, might be lucky when I look again on Friday.

M&S should have a mango I'd have thought. Or the "world foods" bit of a big supermarket should have tinned.

Tesco has them on offer atm, 2 in the pack special price for Clubcard holders

egowise · 27/06/2023 18:12

I bought fresh mango from Asda this week
