Gammon in summer

I have a chunk of cooked gammon in the freezer. Has anyone got any good ideas for how to make it more of a summery meal - trying to clear out the freezer.

Chop up into little bits, well saute courgettes in olive oil, add to pasta with the feta and gammon and more olive oil. Eat lukewarm ... bloody gorgeous!

Would be lovely with bashed new potatoes (do you have an air fryer?) and a fresh cabbage/root veg slaw.

Or a potato salad and green salad with a herby apple cider vinaigrette.

Or minty pea and courgette salad (Can add watercress/mange tout/French beans)

Oooh that's crying out to be part of a ploughmans type meal.

Nice salad, crunchy pickles, a boiled egg, bit of potato salad or buttered new potatoes, some crusty bread, a sweet chutney and a slab of proper cheddar.

Finely chop a red onion and red pepper, fry off slightly then add in a tin of crushed pineapple and a tin of sweetcorn, add chilli and coriander to taste and serve warm over gammon. I'd just serve with salad but goes with anything really.
