Eggless tart/quiche

I fancy a small slice of cheese tart/quiche with a big salad, in this hot weather. But I'm not keen on eggs. Anyone have a recipe for such a thing. Love pastry, cheese and a vegetable in the filling e.g I'm sure in my childhood I had a thin cheese, onion and courgette filling in shortcrust pastry.

I just had a nice one from M&S, caramelised onions and Parmesan on puff pastry. I sometimes do a roll of puff pastry spread with tomato sauce or pesto, then various toppings like fresh mozzarella, sliced tomatoes, chopped sausages, whatever.

Roll of puff pastry
Top with posh caramelised onion chutney
Top with slices of Castello brie
Walnuts
Drizzle of honey
Sprinkle of thyme (dried is fine)
Cook

Or I did these last week, which were delicious:
puff pastry cut into 4 rectangles
filled with mashed feta, a whole bag of chopped baby spinach, finely chopped red onion and red pepper, a drizzle of honey and some chilli flakes
made into pasties
Nice cold

Gently fry whatever is left in the bottom of the fridge, add a white sauce and herbs/flavourings, add to pastry case and bake for about 25 mins.

or use canned tuna and sweetcorn or beans and raw pepper.

I like the white sauce idea. Wonder if you could be super lazy and use a bought cheese pasta sauce?

Rather than making a white sauce I sometimes use crème fraiche with a bit of grated parmasan mixed in.

Spanakopita is so good. Fry up a bunch of spring onions (Chop the white and green). Then add a bag of spinach and wilt. Take it off the heat and crumble in a block of feta (with the watery stuff in it) and some grated cheese. Season. Add some grated nutmeg if you like. You can wrap it in a few layers of filo pastry or puff pastry and bake. I sometimes use a couple of leeks instead of spring onions. Lovely the next day too. Must make it asap.

But is the bottom of the pastry baked through if there's a layer of the filling on the top of it?
