Can I make flatbread 2 days ahead?

I can make flatbread (cooked in dry frying pan. Not very often!

Thinking of doing flatbreads for when folks come round next week.

Can I make them ahead (including rolling them)? Ie make dough and roll flat on Wednesday (busy Thursday) keep in fridge for cooking Friday? Do I put something between each one?

I make and freeze mine. I put baking parchment between them and wrap in clingfilm. Not QUITE as good as straight out of the pan- but still very good!

I find dough goes sticky if left in fridge. I would freeze them between sheets of parchment rather than storing in fridge. Or make dough and keep in fridge and then roll out just before cooking.
