Which veggie fillings for Quesadillas do your kids like? Looking for some ideas

These are simple and quick which is great. Looking for some more veggie ideas please.

My kids are 6 & 3, the youngest not too keen on cheese so some inspiration please.

We have peppers, onions, tomatoes and black beans. The cheese does help it stick together though so I might do fajitas or burritos rather than quesadillas. If fajitas, we usually spread some mashed avocado in too.

We always have cheese with them but

Peppers, onions, mushrooms

Quorn pieces, onions and a tomatoey sauce

Mixed beans in a plain Bolognese sauce, very simple and non spicy.
Or
Linda Mc cartney chicken plus Aldi mex rice, spoonful passata to tone down spice for kids.
Add guacamole and natural yoghurt to top, cheese for those who like it.

Onions, peppers, tomatoes and haricot beans (baked beans without the tomato sauce!). Loads of cheese and maybe sweetcorn.

Roast Mediterranean style veg with garlic and thyme.

They aren't quesadillas without cheese: more just toasted wraps.

If cheese isn’t wanted then you need another squishable, melty, sticky element. Refried beans is good, or in fact any kind of beans (black beans, kidney beans etc).

Cooked sweet potato can also work, or butternut squash?

You might be better off sticking with fajitas/burritos- in order for the flat dry-fried sandwich of the wraps to work you need something sticky and cheese is the basic core ingredient for a quesadilla!

If you need something squishy, making your own refried beans is easy, I make a batch and freeze in portion for having in home made corn taco's I do in the summer.

My 7 year old likes a combo of rice, homemade Pico de Gallo, guacamole and cheese. My eldest likes peppers, lettuce, guacamole, sour cream and black beans. We tend to put a range of fillings out and they make their own and he often skips the meat.

Oh just realised I was talking about fajitas/ burritos not quesadillas. Might work in a quesadilla too though but less filling

These refried bean and corn quesadillas are simple and really good. Especially with pico de gallo.

Anything that works in a savoury pancake, a toasted sandwich or a pie will probably work a treat!

I’d be tempted to try:

spinach and ricotta

Boursin , chicken and mushroom

pesto and chicken

pesto and roasted vegetables

chopped bacon, chopped sausage, scrambled eggs and baked beans

hummus and grated carrot or roasted vegetables

keema (spicy Indian mince with peas) - I would serve that with some raita

aloo gobi or aloo saag or any leftover curry (a bit like a filled dosa)

roasted baby tomatoes and cream cheese

what about a Hawaiian pizza style - cheese, tomato, ham, pineapple (I realise some people may think I’m a troll/should be shot for this!)

banh mi style (a Vietnamese sandwich that uses pate, spicy meat, mint, coriander)

Wow! Thank you all for the suggestions, they are very helpful.

My youngest isn’t keen on cheese but ok with a tiny bit. I could easily mix in with other ingredients suggested above.

Looking forward to trying these out 😋
