Light meals for hot weather

I’m struggling to plan my meals. Does anyone have any go to meal ideas for hot weather please.

Spanish Gaspacho soup (cold and delicious!)

We are loving Tex Mex at the moment- nachos, fajitas, tacos, burritos. Anything meaty I whack in the slow cooker and leave, the rest is pretty much dips and assemble to taste/when people want it.

Chicken with salad in a wrap

For lunch I made couscous with sliced onion lettuce and cucumber and pitta bread with hummus and tomato which the DC and I ate between their respective exams

I just had a lovely lunch of (cold) smoked chicken breast and potato salad that contained a shedload of dill, pickled cucumber, egg and a dash of mustard.
