Mexican beef recipe

I had some gorgeous beef on the breakfast buffet at an hotel in Monterrey a few years ago, & would love to re-create it.
It was like pulled pork, but also quite dense, like a pate.
I've searched WWW in vain.
Any ideas, please?

Could this be machaca? It's usually a dried beef (carne seca, similar to beef jerky) which is shredded then braised until meltingly tender.

I have friends in the States who think machaca is the business, whether with eggs for breakfast or in a taco or enchilada. If you can find one of Diana Kennedy's cookbooks she may have a recipe for it.

I've found some online recipes that are made with ordinary beef, think I'll start with that.
