Any good Vietnamese recipes to share?

I have just mastered monkfish in nuoc cham and I would like to cook more healthy Vietnamese food. I do not have a massive range of ingredients: fish sauce, rice paper wrappers, tamarind, glass noodles, herbs etc
I won't use anything artificial. I don't want Brit adaptations but the real deal.

Does anybody have any wow recipes they do not mind sharing? Thanks

There is also a lady on Instagram called @gaming_foodie who is Vietnamese married to a Korean guy so she makes loads of Vietnamese and Korean home cooking. I followed her recipe for Vietnamese spring rolls and it worked perfectly, I am going to try her pho recipe next!

with one veggie, one recently diagnosed dairy allergy in the house we’re finding Asian food the go to these days. Korean is a favourite, but I’d like to try Vietnamese and Malay.

Easier than you’d think. A pressure cooker really helps with the broth. Especially if you’re doing beef broth.

You’d probably be better off just doing it on the job rather than a slow cooker. Everything tends to come out less flavoursome from a slow cooker IME. Although the slow cooker mafia will come for me for saying so.

A pressure cooker will very much cut down the broth making time required.

Has anybody tried making those green mussels which are often served as starters? (I wish I could remember the name). We only ear fish, shelfish and poultry and love veggie and vegan.

Regarding recipe books, I wonder if Rick Stein or Floyd would have written a recipe book covering the wider region? (I would love recipes from neighbouring countries too - I find Indonesian recipes more intuitively easy to grasp

Tbh, the pressure cooker is just as lazy. More so because you don’t need to do it many hours in advance.

I find chicken broth pretty quick and easy to do. I have some Korean recipes that involve boiling a chicken that produce delicious broth and meat in less than an hour.
