Do you deep fry? How often do you change the oil?

I only do it on a very rare occasion, probably once or twice a year! But I always throw the oil away after using. I think it smells horrible once it's been used.

If you wait for the oil to smell - it's too late. If you sieve out all the bits after use it will last a bit longer. Also try not to get it too hot - a thermometer is a good idea

I rarely deep-fry, but use my wok when I do as there's less waste.
Re-used oil is foul.

My mother used to use solid oil (Crisp and Dry for those old enough to remember the ads) and reused it far too many times. I did used to deep fry, but it was the smell of the oil that stopped me. It seems wasteful to throw away so much oil, but I hate reusing it, so I don't deep fry even though I love 'proper' chips. I think pouring it through a cloth or kitchen paper to filter helps, and you can use it 2-3 times, but I don't think I would want to do that now.
