Not healthy but delicious:

1 shot of Cold coffee (espresso is best).in a glass, fill with 1-2 scoops vanilla ice cream and top with squinty cream and finish with a sprinkling of Nescafe granules. Enjoy!

A slice of vanilla cake, berries, whipped cream and chopped nuts. If i want chocolate cake I use raspberries and a dollop of choc sauce as well

American, so my easy (but crazy impressive) recipe might Be odd because we use cups. Peach Cobbler. Put a stick of butter in a pan (I use a glass one, about the size of a regular square cake pan) at 350°. (180°). While it’s melting, mix a cup of sugar, a cup of milk and a cup of self rising flour. It will be a thin, wet batter. Take the hot pan out of the oven and pour the batter right in on top of the butter. Then, pour a can (tin) of peaches in it and bake until browned. Everyone likes it. It’s very easy, very summery. Add a scoop of ice cream and it’s a love potion.

Chocolate fondue with summer fruits to dip: 3 little pots of dark, milk and white melted chocolate and a big platter of fruit to share with some cocktail sticks for dipping. Use fruit like raspberries, strawberries, nectarines plus some banana and marshmallows. Easy and looks beautiful.

@MadCattery that sounds delicious! I get my ice cream machine out In strawberry season so more of a pre-prep thing than last minute but having a stock of homemade strawberry ice cream in the freezer is great.

In a pinch I buy an angel food cake and serve with whipped cream and strawberries.

Tiramisu is a favourite to make for a special treat and as it's chilled is perfect for summer.

Stick a bit of brown sugar on and let it sink in in the fridge for an hour before serving. Think it was a Delia Smith recipe I got out of the paper years ago. If I've got visitors I serve it in a nice dish with some raspberries on the side and a little short bread biscuit. If it's just us I eat it straight out of the bowl I've made it in like a total glutton Grin

I try to avoid extracted sugars in my weekday desserts so these are what I have come up with:

  • Frozen fruit salad (chop up frozen ripe fruit such as grapes, melon, cherries, berries, oranges) mix with strained yogurt, cinnamon lemon zest to taste. For this to be at it's best you need to wait until the fruit becomes slushy and begins to blend into the yogurt. You get a sensation in your mouth like when ice cream begins to melt.
  • The same as above only the fruit has previously been roasted first. Works best with oranges, pineapple strawberries, cherries, grapes. Pair the spices/herbs with the fruit. For e.g. a bit of ground ginger goes very well with the orange and makes it tangy. Strawberry goes with mint. You get the idea.
  • Ripe bananas mixed with strained yogurt gives me something like a cheesecake vibe which I spread over rye crackers.
  • Rye type crackers broken into pieces then left in yogurt until they hydrate and soften. Mix with cacao nibs and cinnamon/nutmeg. Interesting texture. I got the idea from overnight oats.
  • Toasted nuts/seeds mixed with toasted wheat/barley or any other grain that you would care to toast. Also, I add toasted desiccated coconut if I have it.
  • I make these really thin plain crackers which I bake in the oven in the time it takes to preheat (they are so thin that about the time the light shows the oven is ready they are cooked) I have them stashed in a tin so I can grab a few, spread with 100% pure peanut butter and sliced apple with dried mint/oregano/cinnamon/ on top.
  • I buy those crunchy toasted chickpeas and have them on standby to mix with chopped grapes. Sounds weird, but they taste so good together.

Pineapple brushed with ginger syrup (heat sugar, water and ginger until it makes a syrup. Is even nice with a bit of chilli added) then grilled and served with ice cream or creme fraiche
