Those days where there are no batch-cooked meals in the freezer, you're knackered, and you want something on your plate in as little time as possible. While ideally being healthy ...

Bung Breaded frozen chicken in the air fryer (use anything from supermarket nuggets to the posher goujons )in a wrap,with bagged salad, and cheese. If you are feeling posh, add cherry tomatoes, mayonnaise and sweet chilli sauce.

30 mins of unattended cooking time. 1 minute of prep and assembly time.

or if the prep time seems too onerous then I have fish finger sandwiches

Onion bhajis in a chapati with salad and minty yoghurt

Quick mushroom curry - fry onion and garlic, add spices, add mushrooms and fry until nice and golden, add a grated or finely chopped tomato plus a dollop of yoghurt - eat with bread or microwave rice. Can do similar with chickpeas instead of mushrooms or combine mushrooms and chickpeas.

Not for me but tortilla chips with a tin of chilli on top, cheese on top of that, microwaved, served with cottage cheese, or yogurt.

Cold stuff from the fridge smoked fish or tuna, microwaved potatoes in skins, cooled cut up and dressed with something. Also not for me.

Mine is invariably salad, cheese, or a tin of soup, sometimes a tin of Biona chilli/quinoa stuff and some tortilla chips.

When I can't be arsed, I really and truly can't be arsed so ensure there is always canned soup and 'treat' meals and a supply of cold stuff.

I always have a standby Sainsburys steak and ale pie in the freezer. Frozen chips, peas and gravy. (Reminds me of old work lunches at the pub about thirty years ago, happy days, yum.)

Can't be arsed dinner for DH and I as the DSs are with their dad tonight. Goodlife spicy bean burgers from the freezer on Fazer Finn toast sourdough rolls with gouda slices melted on top and ketchup. Redeemed with a big pile of fresh organic asparagus on the side from our Riverford veg box.

I love those scotch pancakes you can buy already made in M&S (and probably other stores). Pop in toaster. Pop up. Spread with nutella. After school snack done.

Family bag of chilli heatwave Doritos spread out on a plate, top with grated cheese, microwave until cheese is melted. Not exactly healthy so ... ummmm ... maybe have a pint of water with it? Or an apple afterwards? (Of course you could make a wee salsa and guacamole if you have the ingredients, but if I'm in that kind of mood when I'm starving and knackered, I don't bother!)

It's funny because I normally eat very healthily. I'm vegetarian, and I'd say that 3/4 of the things I cook are vegan actually, I love cooking, am retired so happily spend ages pottering around in the kitchen trying new recipes, blah blah blah but on those "fuck it" days I'll have the Doritos and cheese combo, or a few weeks ago I just ate a whole tin of condensed milk 😂. Tasty 😋
