Accidentally frozen courgettes!

Any recipe suggestions for two accidentally frozen courgettes?! Think the fridge wasn't shut properly and it's been trying to compensate...

They will be pretty watery when they defrost so I think they might work best in a soup. Maybe with some other greens and mint?

Gazpacho?

I'd slice them in half lengthways & remove the watery seeds with a teaspoon before doing anything else with them.
Perhaps roast them & use instead of aubergine in moussaka?

You can make a pasta sauce with them, was "a thing" a while ago, a recipe from Meghan Markle. I tried it with exactly the same thing, accidentally frozen courgettes! I didn't cook it anywhere near as long, seemed unnecessary, and it was still surprisingly good. I put chickpeas in the pasta for some more protein.
