Anyone know how to make potato cakes.

I don't follow a recipe. There will be some online.

I use leftover mash, and egg, salt, pepper and flour until it's a texture that holds a thin patty.

They were traditionally fried on medium heat both sides.

As @Gooligan says - that's how I've always made them, just mash till it looks right. but I've just got out my Mum's old Radiation cookbook where she had helpfully noted the page on the inside cover for potato cakes: 3/4lb cooked potatoes, 3oz flour, 2oz butter, salt. The instructions are then to mash the potatoes, work in the other ingredients then roll out and cut into circles. Obviously that's a bit fancy, so we always just flattened them out with our hands into rough circles. Cook on a hot griddle or put in the oven, then turn. Serve with butter. Gorgeous!
