What would you serve with veggie oat patties and tomato sauce?

The patties (a new recipe I'm trying out) are made of oats and rice with grated veg. There's a tomato sauce that goes with them. I'd rather not do potatoes as we had that yesterday (plus they're both a bit carb-y) but I can't think what else to do to make it into a whole meal.
Any ideas?

Yes, oats + a grain. I used millet last time and then realised that I don't actually like millet very much lol
I have a multitude of recipes for veggie burgers/patties/balls etc, and am always trying out new ones I come across. Some of them are astonishingly and surprisingly good!

There will be salad anyway, I just feel like the main meal needs another "something". Like if it was meatballs and tomato sauce, you'd have pasta or rice with it. But having either of those isn't really an option here so I'm a bit stumped.

Sounds like you just need another side dish - my go tos are corn on the cob, coleslaw, sweet potato wedges.

I would definitely have this with chips or wedges, salad and maybe some coleslaw, but cous-cous might work for you?

@TheKitchenWitch if be happy with those & a salad. It's hard if you're trying to keep the carbs low. (I couldn't eat your patties, too high in carbs for me 🥲)

I suppose tenderstem broccoli would be nice with them & salad .

Sweet potato mash, tenderstem broccoli or asparagus drizzled with balsamic glaze and mixed seeds, corn on the cob. Or make them into wraps with salad, avocado etc.

It's low on protein, but given that we eat a fuck load of pulses etc most of the time I'm not too bothered. It's no different to having pasta with nice tomato sauce, is it?

I think I am going to do some veg on the side, I will need to raid the freezer though as all I've got in the fridge are some wilty carrots (two of which have gone into the patties themselves), half a small cucumber and some salad leaves.

@Laurdo I have some smaller, bean/lentil-based ones which I use regularly for wraps, and they are fantastic.

@AnnWithoutAnnie I'm not desperate to keep carbs low, but seeing as they are already made up of 2 carbs I feel I need a little something else for balance. Although if I'm honest I think some sort of fried/crispy potatoes would go best (but we had potatoes yesterday).

Cauliflower bites - cut into smallish pieces, dip in mixture of beaten egg, garlic and flour, then roll in breadcrumbs and bake in the oven until outsides are crispy.

So we've had dinner, thumbs up from everyone!
I did it with some mixed veg (broccoli, carrots and cauliflower), and bread to mop up the sauce. And very nice it was too!

Recipe for anyone interested:

150g oat flakes
2-300ml veggie stock (I only needed 200)
50g grain cooked (original was millet, I used well-cooked soft rice)

Mix and soak for about 10mins

2 carrots (or 1 carrot / 1 parsnip or courgette or whatever you have in the fridge) grated finely and cooked (I did it in the microwave)

1tsp mild curry powder
1tsp mild mustard
1 tbsp plain flour (can also use cornflour)

Mix into oat and grain mixture, and combine well. Season if necessary.

Form 12 patties. Leave in fridge until needed then fry in a little oil on medium heat until deep golden on the outside.

Serve with tomato sauce!

(and bread and veg obvs :D )
