Vegetarian barbecue ideas?

Does anyone have any vegetarian barbecue ideas that don’t involve processed food? (So not ready made veg sausages, burgers etc.)
I have to produce this tomorrow & am at a bit of a loss!
Very grateful for any suggestions!

I make a really lovely fried courgette and onion quinoa salad with bbq feta and pine nuts. I make it for most bbq’s we attend and it always goes.

Paneer tikka is amazing on a barbecue.

And on the same theme, so are these mango paneer skewers.

Halloumi is a winner, and having a glaze on it makes it extra delicious. Last time I borrowed the glaze from the pigs in blankets recipe on this link and it was a real crowd pleaser when I made them.

Oyster mushrooms with harissa like the ones on this link are also totally delightful. it's lovely with and without the chickpea mash.

And for sides this freekeh salad is my favourite barbecue side. It’s bright and vibrant, especially if you add a pack of coriander as well. And miso and gochujang corn on the cob is divine.

mushroom "burgers" - basically a massive Portobello mushroom with cheese/blue cheese, garlic butter etc on the top, bbq'd and put in a bun... Is delicious (if slightly messy Grin)

Mushroom and aubergine burgers with goats cheese and honey.

use the big flat mushrooms and cut them horizontally so they're a bit thinner or if it's a smaller one, just trim it. Cut thick slices of aubergine. Brush with olive oil and cook on the bbq so they are nice and soft and slightly charred.

Cut your goats cheese into thin rounds.

Each "burger" should be a "stack". So slice aubergine, slice mushroom then goats cheese and a drizzle of honey (a little fresh thyme is a huge win) then another mushroom and an aubergine slice.

make enough "stacks" for non vegetarians as well as they get devoured!

Slices of sweet potato in olive oil and cinnamon (you can microwave a bit in advance if you want to speed up cooking)

Also focus on sides! I did a warm spiced red cabbage slaw recently which went down a treat with the veggie sausages

Absolutely big mushrooms with garlic butter. And blue cheese if you like.

And also (separately)... spring onions. Surprisingly lovely.
