Hello,

I've been given a leek and an aubergine in a veg box. I never actually cook with these as my family aren't keen so wondered if anyone had a nice recipe to use them with.

I’d second the burnt aubergine chili too. If you have littles there’s also a hidden veg macaroni cheese on bbc that involves one finely chopped leek. I blend it as well so mine don’t notice but I find it a lovely flavour. Also a cheese and leek quiche or fritatta is yum. Lentil soup.

I would roast/grill the aubergine, sliced in half and covered in oil until really squishy and mix that with parmesan and garlic for a pasta sauce, leeks you can just use in a similar way to an onion but with a gentler cooking.

This is an original take on the usual potato salad. The recipe calls for 2 leeks but I'm sure 1 will be enough. Or add a finely chopped onion instead.

This is also really good. You can replace the second aubergine by adding more mushrooms and peas, and a chopped parboiled potato.

Both go in curry. DS doesn't like aubergine but doesn't notice if it's grated!
