I've got a clingy baby at the moment. Anything tried, tested and loved that I can do with about 20 minutes prep maximum and just chuck in and check very infrequently/once done?

Chicken thighs with peppers/onions/garlic tray baked and then have with wraps or flatbreads and yoghurt or with rice/new potatoes.

Personally, the texture of chicken cooked in the slow cooker grosses me out, so for something that doesn't need slow cooking, I'd roast it in the oven.

A semi-slow cooked chicken tray bake works wonders I find -an although you do have to do whatever sides separately (we usually just have new potatoes and steamed veg).

Marinade ** your chicken in preferred flavourings - I usually use some combo of lemon/oil/alcohol with herbs/spices as preferred but ketchup based works well as well. Lay in baking dish - should be fairly closely packed. Season generously and place in 150 fan/170 oven. Cook for 40 minutes, baste, then for another 25 minutes. I like this as it's foolproof and it doesn't matter that much if it's left in for a bit too long or comes out a bit too early. Very convenient when you're dealing with a crying baby.

** Chuck ingredients at chicken, massage for 10 seconds and consider it done!

Slow cooker chicken thigh stew:
Saute chopped onion and garlic until soft. Crank up heat and add some fennel seeds, a star anise, a stick of cinnamon, squeeze of honey and some tomato puree. Splash in some white wine and allow to bubble for a minute or two. Transfer to slow cooker.
Add chunks of preferred veg to slow cooker - I like carrots or butternut personally for colour and flavour.
Brown seasoned chicken thighs and add to slow cooker. Add enough stock to not quite cover the chicken.
Cook on low for 8 hours or high for 4. About 30 minutes before it's done, add a tin of cannellini beans (or other preferred bean/chickpea).

If the resulting sauce is too thin for you - you can try a few things - transfer to stove top and reduce. Add a little thickening agent and stir in. Remove chicken and lightly mash some of the beans into the sauce. Or even just add a dollop of creme fraiche and stir through.

I make a chicken veg and rice one pot meal, all of mine enjoy it.

I use a large enabled roasting tin, coat with some olive oil, all around, pour in 2 cups of rinsed basmati rice so it's level, add one finely diced onion, 1 cup of sweet corn, one packet of green beans or asparagus in one mixed level on the rice.

I use 2 chicken things per person, coat in some marinade of your choice, I use 2 table spoons olive oil, oregano, thyme and some paprika and brush over.
Place the things on top of the veg, mix 2 chicken stock cubes with 1 ltr of boiling water, garlic butter and some saffron, pour inbetween the chicken thighs, cover with foil and bake at 180°C for 30 mins, take off the foil and bake for another 10-15mins depending on how crispy you like chicken skin.

This is my go to chicken thigh slow cooker recipe. I leave out the cornstarch, sesame seeds & green onions.

Thank you all. I've never used our slow cooker but I need to start as juggling the baby and other DCs school run is getting ridiculous.

Tomorrow I'll try one of these recipes!

Thanks for this @Jellybebe. I think I’ll keep the pancetta but skip the potatoes.

I substitute pork belly rashers instead of chicken to ring the changes.

I went with this one and it went down a treat with some veg on the side and small pasta mixed in at our DCs request. I put the chorizo in a bit later so I could take some out for the baby first.

It was so convenient I managed to do all of the stuff I rarely get to do at the moment and take the kids out.

I did add more of the spices than specified but it definitely didn't have the watery, lack of flavour that I was worried about.
