What's nicest savoury thing to do with duck eggs ?

Ive just bought some duck eggs off a friend who has ducks !

Now I'm told they're great for baking but I dont bake

I like savoury stuff.

Thought about making an omelette - are they just like hens eggs ? Can you do the same with them ?

Ie - omlette, scrambled, fried , boiled ?

Duck eggs make creamier egg dishes than hens eggs, due to the higher fat content of the yolks, so things like baked custard or quiche work well.
Omelettes are a good bet, or for something special try Duck egg royale which is Eggs Benedict and smoked salmon.

This time of the year with fresh English asparagus available, make soft boiled duck eggs and use asparagus to dip in the yolk instead of toast soldiers.

Bake them in the oven with some cream, grated cheese, spinach and butter. Plenty of black pepper. Serve with good bread.

We have ducks, so plenty of eggs. Omelettes are lovely, or quiche. Also scotch eggs, eggy bread, hard boiled and sliced or mashed for sandwiches. Soft boiled duck eggs are the best kind (except maybe for goose eggs), with either asparagus or just toast soldiers.

Break them usually! I've never had a broody duck.

Why !? They aren't going to hatch - they'd just rot and end up in the compost or the bin .

I'd prefer to
Buy local fresh eggs from a friend who loves her ducks and who live a life of Riley rather than the eggs from the supermarket that aren't even allowed to free range at min due to
Bird flu !

They're great for quiches - you can get ready made cases from most supermarkets so there's no faff with the blind baking first.

We had lightly curried duck egg scrambled with lobster at a posh restaurant once. I could eat that dish for every meal

They make a lovely carbonara because the texture is slightly heavier or creamier
