I have fallen into a rut with salads for lunches.
Any good recommendations?
Ideally something I can put in Tupperware and take to work everyday.

One of my faves is avocado red onion cucumber and tomato on salad leaves with chopped crispy bacon with French dressing and herbs. Another is cubes of Roquefort with sliced pear and walnuts on little gem lettuce and again French dressing.

Make a dressing from tahini, splash of soy sauce, lime juice and some rice vinegar. Add to chopped lettuce, cucumber, carrot ribbons, edamame beans, shredded broccoli, some peanuts for crunch are nice.

There are loads of good salad cookbooks.

Current favourite tomatoes black beans mango spring onion red cabbage paprika cayenne lime olive oil.

Black olive watermelon feta prosciutto basil.

This miso and peanut butter chickpea salad from Ottolenghi is so good. I prefer it with the chickpeas still warm, but as it’s all meant to be the same temperature it would be fine in a Tupperware for lunch.

Get a little pot that fits in your lunchbox for your dressing. I like tahini and lemon, or I also just have mayo with a squeeze of lemon mixed in. Olive oil with lemon, basil, parsley.
anything with acid and/or salt needs to stay away until you eat it or you’ll just turn it to mush!
