How can I rescue my too vinegary plum sauce??

I used what the recipe said etc but the red wine vinegar is overpowering (damn stuff, never have much luck with it) - is there anything I can do? Adding more sugar isn't helping and is just making it a bit sicky.

Does it need cooking? If it does the wine taste should cook off, try cooking a bit more with a splash of water.
Otherwise, sorry, dunno.

the only other thing that might work is a bit of baking soda. Prob buggered up tho!

add more of all of the other ingredients so you dilute the vinegar but keep the taste of the sauce you were going for. I often add plain yoghurt to tone down sauces (but that depends on what you are making). Flour sometimes helps too.

Thanks all - I ended up having to make a new one in the end as whatever I did caused a different kind of catastrophe! As it turns out, the amount of red wine vinegar would have required me to x4 the ingredient!
