Excess bags of spinach, rocket and cress. Anything other than salad?

Please help MN. I was planning a few big salads for a party - ended up with some excess bags of spinach, rocket, cress. Can't face eating them all over the next two days. Is there anything else on earth I can do with them ?

Put the spinach in something airtight and freeze. It's great for curries, soups and stews.
Not sure about the cress and rocket. Hand some out to your neighbours, so they don't get wasted?

Cook the spinach, even multiple bags of it will give you approximately a couple of tablespoons of cooked spinach. Grin But seriously I agree with freezing it for future meals.

Bin the rocket. Awful stuff.

Maybe egg and cress sandwich fillings for the foreseeable future? I never really know what to do with cress other than that.

Green soup, blend into stock, season and add white pepper. Gorgeous. Have a cup as a snack or before dinner.

i would make some pesto with it! blend together with garlic, olive oil, lemon juice, pine nuts (I use cashews), salt, pepper etc you can then freeze it or use it up over a week or two. delicious!

I used to make a courgette and rocket soup. Courgette quite bland but bulks out the peppery rocket. You could throw in the spinach and watercress as well. Start off with frying an onion and maybe some garlic.

Another vote for spanakopita but I like them as triangles and you can freeze them and bake individually from frozen. You can put literally any greens in spanakopita - even things like dandelion leaves or nettles!

Blend it all with olive oil, mixed herbs and hard cheese.

It makes a lovely pesto style sauce that can be used for a pasta bake.

I make a delicious super quick sauce to go with salmon, pasta or chicken.
Chop a bunch of spring onions and soften in butter or oil( takes no more than one minute)
Chop up the bagged salad, not too finely.
Add to the softened onions, put a lid on the pan and wilt it for about 30 seconds or so.
Stir in a tub of crème fraiche,( or use cream, or Greek yogurt)
Simmer for about 2 minutes and Add salt and pepper
It’s delicious and a great way to use up slightly sad bagged salad

Spinach can be frozen as others have said.
the remaining leaves can be blitzed into a pea soup with a squeeze of lemon juice- delicious!

this is a great simple spinach soup recipe. I don’t see why you couldn’t bung the rocket and cress in too.

I sometimes add some petits pois for a little sweetness. And crispy bacon on top.

Or sautee it with garlic and butter and then blend with a mix of cream cheese and parmesan to make a pasta sauce. Really nice.

If you like doing Spaghetti Bolognese, then you can use the extra spinach in that. Blend the spinach with some chopped onion, garlic and tomatoes (we just use tinned tomatoes) together to make the Bolognese sauce, then pour it over browned mince and continue to cook as normal.
Honestly, you can not tell that there's spinach in it when it's all cooked up with the mince!

I assume you mean mixed bags and the cress is watercress?
I'd probably chop the latter a bit with scissors then wilt a bag into some sort of pasta dish.

Or use the mix instead of spinach in saganaki spinach (not sure I've spelled that right) - basically just warm some olive oil, gently cook some diced tomatoes and minced garlic, chuck in the greens, lid on and cook lightly.

Freeze spinach and add to curries.

Make a green smoothie.

Can’t help with the other stuff, but spinach with feta makes a wonderful omelette filling. Just fry it for a couple of minutes in your omelette pan till it’s all wilted, then put it in the oven to keep warm, make the omelette, put the feta in before the eggs are set, and spread spinach over the top. Then fold the omelette, cook it for another minute or so, and it’s done.

It makes a fantastic pesto style sauce - put a bag in a food processor with olive oil, salt, pepper, garlic, walnuts (cheaper than pine nuts) and parmesan if you have some. Blend it up and stir into pasta.

You can microwave the spinach as a side vegetable dish for one meal. Maybe make a sag aloo to
Accompany another? Also have with breakfast, and mixed with a salad for lunch. Or use it in an omelette for lunch.

Garlic, seasoning & whizz in the blender for pesto. Saute with red onion, garlic and anything else, whizz for soup. Stick it in micro and freeze in bag for another time.

I've made this loads. It's absolutely lovely and refreshing and works with hot or cold pasta. If you haven't got pine nuts, don't worry I seldom have and it still tastes great
