How much in advance do you make a cake?

I am hosting a tea party for a bday. I have a million things to do one of which is baking a cake. It’s been years since I have made a special cake and normally would have done it the night before. Just wondering if I could get away with doing it 2 nights before or will it go stale? It’s a vanilla sponge with butter cream filling and ready to roll icing on top of that helps.

2 nights before would be fine if you cool it fully, wrap and put in an air tight box. Alternatively, if you have room, freeze it and decorate while still frozen. I always did. this with the children's birthday cakes and it stops bits of cake mixing with the icing.

Oh thanks didn’t think of freezing it! If I use an airtight box would you put that on the fridge or just room temp? Thanks

I usually make a cake one or two days before I need it and ice it in the morning.

i wouldn't keep it in the fridge if you have somewhere cool to keep it. Our garage is always cold/cool regardless of how warm it is outside so i keep things like that in there.

if you do freeze, open freeze til solid then wrap.
