No I won't be making coronation quiche, but all the talk of it has given me a notion to make my own.
I used to make it years ago with a really easy, no blind baking crusty base, but can't remember how I did it.
Anybody got their own recipe they'd share?

Go if fridge section of supermarket, buy ready made crust! Comes out perfect every time.

I do blind bake, but the rest is just chopped onion and some sliced tomato and mushrooms if I have them just scattered on base. Then handful of grated cheddar. Pour over custard. I use a carton of cream, some milk and a beaten egg whisked together and seasoned. Love chopped mint or basil in the summer. I don't weigh or measure anything.

I used to do a quick base of breadcrumbs and chopped nuts stirred into melted butter - bit like a cheesecake base pressed into the tin.
