Not sure whether I want the kids to like them or not. If they do, less for me to eat when I meant to be losing weight and if they don't like them......

I think they will.

Passionfruit melting moments.

Prep time - 40 mins (didn't take me that long.)
Cooking time - 15 mins (I did longer)
Makes about 25 (I made 12!)

3 passsionfruit
250g butter, softened
1 teaspoon vanilla extract
1/2 cup (80g) soft icing sugar, sifted (I didn't bother)
1 2/3 cups (250g) plain flour
1/2 cup (75g) cornflour

Passionfruit butter cream (I didn't bother doing this)
80g butter, softened
2/3 cup (110g) soft icing sugar

Method

  1. Preheat oven to moderately slow (170C or 150C fan-forced). Line 3 baking trays with baking paper.
  2. Remove pulp from passionfruit, place in a fine sieve, press down with back of a spoon. Reserve 1 tbsp of passionfruit juice for the butter cream.
  3. Beat butter, extract and sifted icing sugar in a medium bowl with electric mixer until pale. Stir in combined sifted flours in two batches, stir in passionfruit. ( I put the flours in separately having misread it!)
  4. With lightly floured hands, roll 2 level tablespoons of mixture into balls, place on prepared trays about 3cm apart. Dip fork into a little extra flour, press biscuits lightly.
  5. bake uncovered for about 15 mins or until biscuits are a pale straw colour. Cool biscuits on trays for 5 mins, transfer to wire racks to cool.
  6. Meanwhile make the butter. Beat butter and icing sugar in small bowl with electric mixer until pale and fluffy. Beat in reserved passionfruit juice.
  7. Sandwich biscuits with 1 easpoon of the passionfruit butter cream. Dust with a little extra sifted icing sugar if desired.
