Recipes and ideas please!

Asparagus in season is one of my favourite things. I'll be buying some at the farm gate this week ( if I can find an excuse to head out that way) and always buy too much as it looks so amazing straight out of the field and then I end up making soup for the freezer which seems such a waste.

Our usuals:
Pea snd asparagus risotto
Soup
Grilled and served with a poached egg
Used as soldiers for a boiled egg
Tart
Side veg ( plain or with butter/hollandaise)

As a first course with butter or mayonnaise or hollandaise as you mention it. We never get bored with it.

We make Carbonara with it. So replace the Pancetta with Asparagus. All that runny eggy sauce is great with it and a decent grating of Parmigiano on top.

No such thing as too much asparagus. I need to go up to the allotment as the other day the first spear was poking through and I'm allowed to take a small harvest this year!

We often just have it steamed and the drunk it in butter. Love it dipped in egg too or wrapped in parma ham and done on the bbq.

I like asparagus best grilled or roasted. My favourite is to roast some halved baby potatoes, then add asparagus chopped into short lengths and cubes of halloumi, roast some more and serve with a squeeze of lemon juice.

I'll eat it any which way it comes. I LOvE asparagus. Bbq / chargrilled with hollondaise or black pepper and lemon butter is probably my favourite.

We were away over Easter. Stopped off at a farm shop and it was £8.50 for six spears of wye valley asparagus....

It's almost 2 weeks since I posted and we've had asparagus almost every day!
Chicken and asparagus pie
Asparagus and feta quiche
Asparagus and pea risotto
Asparagus carbonara
Baked salmon and asparagus (thanks for the link!)
With (boiled and poached ) eggs
With griddled ham
In a pasta primavera
In a Spanish style tortilla with sliced new potatoes and shallots.
On its own with hollandaise.
We'll be having soup on Monday.
