Thai Red Curry

Hello,

Can anyone share with me a really good recipe to make a Thai red curry paste?

I always bought the Blue Dragon one, but they've changed it since they've changed the pot and it's now horrible! I've tried several others and I can't find a good one, so I'm going to make my own.

Lots online but thought it'd be good to go for one recommended!

If you still want an easy one, the Aldi kit is very nice.

I fry it off with a tiny bit of sesame oil (watch it doesn't burn) and then once it becomes fragrant add a tin of coconut milk. I'll usually add a squeeze of lime juice and some brown sugar as I like it a bit sweet.
I tend to cook up the veg and protein separately then add to the sauce.

The best one I’ve used is Mae Ploy, I’ve seen it in large Sainsbury’s or online

I've tried all of the pastes (or the vast majority!). I loved the old Blue Dragon version but they've gone and ruined it!

So looking for a recipe to make my own paste at home, got to be worth a go!

I use this recipe.
Don't be put off by the long list of ingredients they are almost all things you probably have in the cupboard any way. I prefer to make my own paste because it means I can reduce the chilli to make it more family friendly (in this I don't use the dried chillies) and reduce the lemon grass as I find it really over powering. I'm not claiming this recipe is in anyway authentic but it does taste good. It's also pretty quick to make if you have a food processor and it can be frozen.

Thai red curry is the only thing I use a jar for. I have been a bit disappointed so wanted to try making paste. I went to two big supermarkets yesterday. I could get a jar for crushed galangal, could not fresh, nor lemon grass. I'll give it a go with what I have.

I'm going to try Mae Ploy one too.

That should be could NOT get fresh galangal or lemongrass.

@QuestionsFromThePublic in case it helps my local Morrisons has lemongrass, as does my M&S food - so if you have either of them it could be worth looking there. Can't say I've ever seen galangal in any of my local supermarkets.

Ive never found a jar sauce that is any good to be honest, they all use far far too much ginger and lemongrass

If you make your own you can tweak it to suit

So I use an old Ken Hom recipe which off the top of my head is
Shallots
Garlic
Ginger
Coriander
green or red chilies according to what you want
bit of sugar
fish sauce

All blended up together

The trick in this one is that you then fry that off and add coconut milk and put the lemongrass in the coconut milk bashed up but not chopped up it doesnt go in the paste, you then remove it afterwards. Then towards the end of the cooking time you throw in some thai basil which is very spicy. You then add in sugar and fish sauce as you're cooking it to tweak the sweet/salty/sour combo
