can you sort of preserve herbs in butter?

yes was thinking of doing lamb cutlets with basil butter and pine nuts for tea, then got side tracked by the fillet steak!,

what i normally do is chop the herbs with the hand blender shopper and then add some butter, then use this herbby butter to spread on the lamb, then press toasted pine nuts on top.

anyway i was wondering how longdoes cut basil last in the fridge and would it last long if i mixed it with the butter now?

Herbs don't last too long in the fridge and I don't think mixing in the butter would make that much difference. You could make up the herb butter and then freeze the lot - would last much longer than leaving it in the fridge.

chop the herbs and freeze them, then add them to the butter still frozen when you need them.

Good old Jamie Oliver did this on the telly a couple of weeks back. Just wrapped the herb butter in cling film and bunged it in the freezer.

I made the Jamie Oliver one around new year and had some last night with cabbage. Blanched the cabbage then stir fried with herb butter and balsamic. It was gorgeous.

sounds yummy

mine is copied from one they sell in marks and spencer for about 10 quid !
its from there cook range, all it is is a pice of lamb herb butter and pine nuts, saw it and thouggh i can do that myself
thats how i get som of my ideas and copying restaurant menus

I make the herb butter and make it into a sausage. Chill it, cut into portion slices, then freeze.

Tried to find it online to post but suspect you have to find the book. Didn't write it down at the time, sorry... and since it's been in the freezer so long have forgotten. Not very helpful, am I.
