Easter Sunday

Any suggestions for a vegan feeding meat eaters for Easter Sunday? I've never eaten meat let alone cooked it and I am not interested in roasting a leg of lamb or anything like that. I'd usually buy a ready cooked chicken but obviously no shops are open.
My plan at the moment (although open to ideas)
Roasted baby potatoes
Coleslaw
Bread
Salad

Some kind of pudding
Thanks in advance!

There's no main dish, it's not a balanced meal - even for a vegan.
Shops are open on Saturday, buy some ready-cooked protein then ?

Some protein? A lovely bean stew with flatbread or rice. A vegan roast.
These guys are really good www.bosh.tv/www.bosh.tv/
That's not really a meal OP

I’m a bit confused what are you asking? Do you want a recipe for vegan main or what?
You can buy a ready cooked chicken or any other ready cooked meat or any vegan things on Saturday or even on Friday.

It’s Easter Sunday. My family (wider family not me specifically) always have lamb. Just like people have turkey at Christmas. They’d genuinely be offended by not having lamb. Totally understand you don’t want to cook a leg, what about a nice Moroccan style lamb tajine with chickpeas and stuff. Slow cooker so you don’t even have to touch it.

PurBal · 06/04/2023 12:43

I was assuming you wanted an easy meat option. You OP isn’t 100% clear.

SisSuffragette · 06/04/2023 12:54

Yes thank you, I will sort a vegan main like some "chicken" fillets or something, I was after an easy non vegan main to add to what I've got.
I didn't know you could use a ready cooked chicken after the day you bought it.

I'm a meat eater and love lamb but I can't believe people would actually be offended by not being served lamb at Easter!

What main would you usually eat * *SisSuffragette? If I was kindly invited for lunch I'd be happy to try something different and wouldn't expect a vegan to cook meat if it made them uncomfortable. I'd just be grateful someone else was cooking for a change.

Chicken sounds really weird for Easter. Would second getting a lamb shoulder or similar for a brause/tagine. Or else cutlets for herbing, breading and quick grilling.

How many do you need to cater for. Are you certain they will miss the meat if you don't do it. Like a pp, although I do eat some meat, I also eat many many vegetarian and vegan meals and would be more than happy to eat whatever you had prepared.
If however you do want to go ahead with meat, looking at what you already have on your menu I'd probably pick up some kebabs. But hers tend to do good ones but if you would struggle going into a butchers (understandable because it is incredibly meaty!) most supermarkets will sell them. Something along the line of minted lamb and lemon, garlic and herb chicken. Then all you would need to do is pop them on a tray and then put them in the oven. You could also buy a quiche.

My inlaws are resolutely meat eaters, they are fine when they come to ours and I serve a vegetarian lunch.

If you don't know how to cook it, it could actually be dangerous, undercooked meat. Or awful if it ends up overcooked!

Why not serve something delicious and dramatic looking, the inset photo on this doesn't do it justice at all, it looks golden and amazing:
Bastilla

SisSuffragette · 06/04/2023 19:00

Thank you so much for the reassurance. I think you're right and I'll go full vegan, it's my family not people who would be offended either way 😅 any suggestions as to what I can add to the table?

The bean stew with crusty bread sounds lovely to me! I would like a big bowl of buttered veg on the side as well but then I'm fussy lol.

AtleastitsnotMonday · 06/04/2023 20:45

Vegan sausage rolls might be a nice addition.
