Easter Sunday Dessert?

I'm looking for some inspiration for a dessert to bring round to dinner at my in laws this Sunday. Something I can make ahead and will travel easily.
I've been trying to think of nice spring flavours - I'm not one for mini-egg everything.
Have any recipes wowed you recently?

I'd go for something fresh on a day when you might eat a lot of chocolate anyway. Berries/lemon?

I picked up a "giant hot cross bun" (really just a hot cross bun panettone) from aldi that I'm going to turn into a bread and butter pudding over Easter. Will travel easily and is actually better with extra soaking time.

I also made a cheesecake inside a hollow Easter Egg, pretty standard recipe with biscuit crumb base, cream cheese and cream filling decorated with mini eggs. The only difference was using the Easter Egg as the dish to serve from!

The trick to separate the chocolate egg without it breaking is to heat up the blade of a sharp knife in hot water before very gently scoring along the seam line.

These sound great, I'm considering the lemon meringue pie.
Do I need to blow torch the top? I don't own one, wondering if it will colour nicely under the grill or in the oven?

I usually do a tart key lime pie to counteract all the chocolate or a rhubarb cheesecake
