Hazelnut mousse recipes anyone?

Help! I really want to make a pudding tonight of layers of chocolate and hazelnut mousse, after having something similar when eating out. But all my searches for hazelnut mousse recipes are bringing up either Nutella mousse type things (I don’t want any chocolate in the nut layer) or very strange vegan options using silken tofu and noodles.

Does anyone have a nut mousse recipe they could share?

Here you go. I've made this with both hazelnut and with pistachio and both work well. You can lower the sugar content a bit if you prefer. I've found that it needs towards four hours freezing. Two is not enough.

The recipe is from an old book called Feast of Floyd by Keith Floyd.

Am slightly leaning towards a sweetened whipped cream with hazelnut liqueur and could add the caramelised nuts from the recipe above?

No, I don't think. It's too liquidy in the non-frozen stage. The caramelised nuts are delicious though - everyone loves them. (A hint of raspberry goes well too to offset the sweetness (I serve it with a raspberry coulis if making hazelnut and a mango coulis if doing pistachio.))

Might stick some raspberry on the top then. I’m planning crushed Italian biscuits then layers of chocolate and hazelnut so raspberry would make a nice top.
