Vegetarian meals that are also low cal/low carb?

Hello - my teenager has just decided they want to be vegetarian (well, pescatarian really). Fair enough - we don't eat huge amounts of meat anyway. But my husband doesn't really eat many carbs, and I'm also doing low calorie/low carbs at the moment to lose a bit of weight. I'm struggling to think of vegetarian meals which can suit us all - last night I made a veggie stir fry and served the teenager noodles with theirs, but can anyone suggest other options please? I also don't really eat fish - I can do tinned tuna and I also eat prawns but that's it. Any ideas gratefully received!

It depends a little on how low carb your husband is. Does he just avoid things bread, rice, pasta, potato or does he extend that to also avoid higher carb veg like peas, sweetcorn, sweet potato, butternut squash etc what about beans and pulses?

Celeriac & cauliflower are really useful low carb vegetables that can be filling and feel 'carby'

They both roast well & puree well (use instead of mashed potato)

I also love cauliflower rice when doing low carb... so easy to make and i add lots of freshly chopped herbs & nuts and spices

So seeing as you like prawns.. you could do a prawns in a north african style tagine sauce (harissa, tomato etc) serve with spiced & jewelled cauliflower rice and a salad

I eat low carb due to diabetes and am always on the lookout for more veggie or fish low carb meals.
I eat more meat than I really want to because low carb needs to be my priority

A thai soup made with coconut milk. Mushrooms and peppers in it. Son could have his with noodles in it, and you could have prawns and courgette noodles

Tortilla made with courgette, peppers, feta. Served with salad and new potatoes

I think quorn mince isn't too high in carbs, so could do a chilli. Have yours with cauli rice

Paneer curry with cauli rice for you or make some low carb breads

Aubergine parmigiano with salad

Mushroom stroganoff

Cauli rice mushroom risotto. There's one I make from a keto recipe book I've got and it is delicious

How about fajitas? Cook veg and meat separately, grilled haloumi instead of meat for dd, you and hubby can have meat and veg (you can use large lettuce leaves as wraps), dd can have haloumi, veg in wraps, everyone can have salsa, daughter and hubby guacamole and sour cream too. Serve with a slaw dressed with lime and coriander.

Field mushrooms, make a filling from the chopped stalks, red onion, chopped, celery and leeks. Top with Stilton. Serve with sides of wild rice and green veg.

Tomato based curries, cauliflower and red pepper is nice.

Roasted veg frittata (no need to include potato.

We use a lot of quorn. It is low carb and available in lots of different forms.

Could you make a separate vegetarian meal for your teen? You could batch cook so they’d have the meal across different days. Or something easy like veggie/tofu/prawn stir fry or curry with noodles or rice. Then you and dh can have a low carb meat option. No need for your teen to go low carb and low cal then.
