Looking for crowd pleasing hot buffet recipes

I'm having the family (11 people) over for Easter but have decided not to do a roast due to my family not liking roasts.

So I've decided to do a hot buffet.

I'm looking for recipes that are not too difficult. Perhaps something I can prepare the day before.

Do you like Mexican? A pan of chilli con carne and/or bean chilli if you're catering for non-meat eaters, some chicken in fajita spice, plain chicken slices if kids or people who aren't into spice would prefer that, then wraps, nachos, cheese, guacamole, salsa etc with some chopped up carrot and pepper.

A theme is an excellent idea.

Indian could include samosas, bhajis, couple of curries and a big pan of rice.

Alternatively, you could do a couple of big quiches, a pan of crushed baby potatoes and a warm green salad.

Failing that what about a load of sliced rolls and things like pulled pork, birria, things like that. Load up your cob and off you go.

Home made sausage rolls
Home made vegan / veggie sausage rolls (the Jamie Oliver carrot puff from his recent £1 meals looks good and could omit the feta)
A few roast chickens (or buy the rotisserie ones that day even easier!) all shredded up warm with baguettes / Mayo
Pizza for the kids
Cheese / grapes / crackers / chutney
Fruit platters
Chocolates for the kids / little cake stand with fondant fancy's / mini eggs / Battenberg
Few bunches of daffodils ;)

Would a taco bar work? Easy for dietary requirements and food preferences as people can take what they want. Most can be made in advance, though guac would have to be made on the day (or most supermarkets sells packs of smashed avocado and lime which would do). And tacos are a crowd pleaser.

I did something similar for my DD’s family birthday party earlier this year.
I made:
meatballs
chicken skewers
Honey glazed halloumi
bean stew
stuffed peppers
Falafel
Couscous salad (made on the morning)
Flatbreads

Do you have a slow cooker? If so I'd do something like a chili or a curry so it can stay hot for a long time.

Baked potatoes with a selection of fillings and some salad.

So maybe a SC of chili, baked potatoes, cheese, tuna/mayo mix you get the idea. Some bread / tortillas, sliced peppers etc.
