Banana bread in air fryer?

WildFlowerBees · 30/03/2023 09:27

We have the Ninja with the bake option, I have overripe bananas so I'm going to attempt the Mary Berry banana bread.

If I bake it in the air fryer any ideas how long for? The oven is 140 fan for 40-45 mins. Thanks

The bake option is not as quick as the airfry option, so I would personally start at 30 minutes and then check to see how it is doing.

Well this is serendipitous- I was just about Google how to do this!

What size tin are you using? My 2lb one won't fit in the Ninja dual max.

Do please let us know how it turned out, temperature, time etc.

I’d put it on 140 for 35 mins and check after around 25 mins. And keep checking every couple of mins. Once you smell it it’s usually just about done.

Let us know how you get on 😊

Well it's in, fit in the air fryer no issue (we have the lift up lid one) I cannot bake, even when I follow instructions to the letter I seem to mess it up so I have no expectations.

Will report back

Well no one is more surprised than me, it's a triumph! I did 140 degrees on the bake option and it took 30 mins.

I used wholemeal flour instead of white and it's lovely! Only thing I should've done is doubled up as the tin was too big for the ingredients.

Another win for my air fryer!

Fantastic result! Thank you for feeding back, I'm now fully confident to try my own later 😊

Well mine was an unmitigated disaster!

I used a normal recipe here:

thehappyfoodie.co.uk/recipes/banana-loaf/

Used a 2lb silicone loaf tin for the Ninja Dual.

Put it on bake function at 140 degrees. It's had an hour and the top is very brown (which is fine) but the bottom is still stodgy liquid!

I've put it in the normal oven for a while with some tin foil on top in the hope I can salvage it and we can all have a slice before bed, but I'm not holding out much hope.

It's annoying as I do a perfect banana bread in the oven normally.

Any ideas what has gone wrong?

Awh no 😖

I have 2 ninjas (The 15.1 foodi and a small one drawer airfryer). Neither will hold a 2Lb cake tin. I split the mix between 2 x 1lb tins and shorten the cooking time.

Only once have I used a silicone mould (bread pudding) and that was the only time a bake ended in disaster. I have used the same recipe but using a baking tin, since, with no problem.

I’ll have a go at banana bread in a silicone mould tomorrow (won’t be until evening as I have GS for the day) and report back 😊

Im off now to hide 2 bananas before GS gets his hands on them in the morning….

Thanks Purple! I've used silicone in the oven before and it's been fine. It has put me off trying in the Ninja again - I'm not a natural baker!

No. Don’t give up! Keep at it and find out what works. Using an airfryer is a whole new way of cooking. It takes practice. You’ll get there. If it works once it will work again.

I try a recipe and if it works I write the recipe and method I used in a book. So I know where I’m going next time. If it doesn’t work I keep trying until it’s right and then write it down.

My ninja 15.1 cooks quicker than my ninja drawer airfryer - usually with better results. Keep trying what works best for you x

@SheldontheWonderSchlong

Sorry it’s late. Just made the banana bread. I split the mixture between a 1Ib loaf tin and a silicone mould (I used a silicone liner as my silicone loaf mould had split).

Both have come out fine. Both cooked through and are a nice, light texture.

The loaf tin I cooked in the foodi. It took 25mins. The silicone mould I cooked in the airfryer with a drawer. It took 30 mins.

I have no idea why yours didn’t cook? Maybe try again and split the mixture between 2 smaller baking tins?

Thanks - yes I think it was because there was just too much of it! It finished off ok in the oven and it was tasty so not a total loss. I've ordered a 1lb tin that should fit in the drawer so next time I'll try a smaller cake.
