Where to buy salmon that's safe to eat raw for sushi?

I keep hearing conflicting things that farmed UK salmon has no parasites so safe to use if bought in Waitrose etc so safe to eat raw. If not can anyone recommend somewhere online that sells 1kg salmon suitable for eating raw that's not ridiculously expensive. Thank you.

It is ridiculously expensive online. Speak to a local fishmonger. 1kg of salmon will do a huge amount of sushi, a little goes a long way!!!

Its sashimi grade you need and I thought it was the freezing that kills the parasites.

There is a shop at Billingsgate which sells it, but otherwise speak to your local fish monger or just google. The fish Society and fine and wild came up as options. I havent tried the online ones though.

No such thing as ‘sushi grade’ salmon in the UK. You still have to freeze it at -18c to kill the parasites. But the good thing is that freezing and defrosting does make it safe to eat.

Sashimi-grade is not a protected term in the UK, meaning anyone can use it and there are no restrictions or regulations that go along with its use. That being said if a fish supplier is saying that their fish can be safely consumed raw, and it's not actually safe, then they would be liable legally (I think), so you don't often get fish suppliers making the claim unless they can back it up.

I have looked it up myself recently and found The Fish Society online and they seem to have very good reviews - the negative ones are largely due to delivery issues, order fulfilment issues at Christmas, and a few people who think it is poor value for money. I haven't used them yet, but plan to. Other advice seems to be to find a reputable fish monger. From everything I have read it is not possible or recommended to get sushi/sashimi grade fish from the supermarket.

Just buy your usual salmon, freeze it overnight and thaw before use.

As I understand it, all 'sushi grade' salmon is, is salmon that has been frozen, which kills any parasites. So either buy fresh and freeze yourself (for more than overnight, a week or two I think), or buy frozen salmon.

Talk to your fishmonger. You need to get fish that is as fresh as possible. Find out what day they are getting salmon delivered and buy it/eat it the same day.
