Mexican-inspired supper

Just that really.

cooking for 8 on Saturday. Lately, have done middle-eastern spreads but would like to branch out to Mexican.

Thinking mainly veggie, with perhaps one meat dish. Sharing plates. The challenge with Mexican is perhaps how to serve it all hot. With the middle-eastern, some is prepped in advance and served room temp.

So, looking for recommendations of good Mexican supper recipes.

This vegan mexican dish is delicious - we aren't vegan but have it pretty often - I bulk cook it (2 x the recipe) and freeze it. Probably better the day after so good for entertaining.

I add encona hot pepper sauce as we like it spicier and don't bother with the lime sauce every time although it is nice if you can be bothered to make it!

As PP mentioned enchiladas would work well, ive tried to do fajitas for a crowd before and it was a bit of a pain to serve any number of people mostly because it's best when freshly cooked, taking you away from your guests. At least with enchiladas it can all be cooked ahead of time and just put in the oven to warm through when guests arrive.
I'd also make some mexican corn bread, sweetcorn fritters again make in advance then heat through on try in oven, a veggie chilli, tortilla chips, homemade guacamole and salsa, sour cream and a chopped Mexican salad.
