Deep quiche and interesting salads

I’ve kinda been asked or rather encouraged to put on a birthday tea for a good friend. She is an excellent cook as I’ve been round to hers for several lovely meals.
lt looks like I’m hosting an afternoon tea kind of thing.. and the theme is “ posh deep filled quiches” the kind that are served in nice deli restaurants.
Alongside these quiches are to be different types of side salads..like the ones in these smart delicatessens or in M and S!!

l can do a coleslaw but that’s about it!! As for a quiche and interesting salads!!
Any help would be appreciated as in good quiche recipes or salad recipes.
l really don’t want to let my friends down and I’m sure they will all help where they can but I’d really like a “ show stopper” tasty ,creamy quiche. X

I don’t have recipes for quiche as I tend to do them just by feel, but one of my favourites is leek and Caerphilly. Just sauté the slices leeks in some butter, and mix with crumbled or grated Caerphilly cheese and salt and black pepper. Put in a deep pastry case (ready made is fine) and top up with beaten egg and a bit of double cream.
Classic quiche Lorraine is also good - I put in sautéed onions and smoked bacon lardons - don’t skimp on fillings.

a colorful hearty salad that's easy to put together.
buy a store bought crust or phyllo pastry for the quiche (take it from me and i'm a decent cook and hostess it's not worth the mess) research veggie combo's based on what's available or fresh. butternut squash and blue stilton add in some broccoli for the green contrast and bacon bits...

Ottolenghi is one of my go to's for salads. I always do these tomatoes with sumac onions and pinenuts just because it's so colourful and always looks impressive.
Cumin roasted carrot ribbon salad
Sweet potato and bacon salad
Broccoli, blood orange and blue cheese salad

Smoked haddock is good; brush bottom with wholegrain mustard, add layer of fried onions, add shredded kale, smoked haddock, wensleydale cheese and egg stuff.
Get some roasted buckwheat from your local Polish shop, cook with frozen broad beans and peas, add loads of herbs.
Bowl of olives
Don't feel bag about buying a bag of mixed salad leaves and jazzing it up.

Why don't you ask each friend to bring along a plate rather than you having this whole thing pushed onto you??? How did this even come about? When is the party? Spring/Summer?

I don't have any quiche recipes, but here are some salad ideas:

  • Pear, blue cheese, rocket and/or baby spinach, pine nuts and balsamic glaze drizzled over
  • Watermelon, green bean, toasted pinenuts and grilled halloumi
  • Chicken or plain caesar salad
  • Warm Thai beef salad

I've made many types of quiches over the years but for sheer deliciousness I don't think you can beat a classic Quiche Lorraine and it's not the most complicated of quiches

Love salads. No idea about quiche - can you buy / order them 😬

Got to do the classic tomato mozzarella.
Fig salad is delightful; can do with blue cheese, or goat or gruyere.
Apple and cheddar salad is simple but lovely crunchy texture
Grilled peach also lovely; to go with goat or burruta, feta or Parma ham

Could go with an eastern med vibe:
Tabbulouh
Fatoush salad (with pomegranate dressing)

Fillers;
Potato salad
Couscous
Pasta salad

Thankyou for the great suggestions. I’ll have a proper look tomorrow and will have time to do a few to test them.
As for being the one who will be central to the party..well, I kind of just suggested it and then others went with it!
i quite sure they will happily bring olives, breads , dips , crisps etc… but I just thought that quiche, salad and jacket potatoes would be quite easy to do!!
The do will be somewhen in May or early June. Hopefully the weather will be ok to be outside for part of the day.

My favourite quiche is cheddar cheese with sweetcorn, red onions and slices of tomatoes.

For Salad what about watermelon with feta and mint.

Don't forget snacks such as little bowls of crisps, olives, nuts and of course cheese and pickle on a stick.

A caterer gave me his left over Pidy savoury tart cases during lockdown as I’d offered to do some cooking for two friends who were NHS nurses. They were deluged with cakes… but nothing savoury.

They were brilliant to use and even better when I took on board my friends suggestion to sprinkle Parmesan into the bottom of each case before filling it!

One of the nicest quiches I had from a deli was salmon and sour cream, it was cooked rather than smoked salmon and delicious.

Quiche Lorraine is unbeatable as far as I am concerned, I use Delias recipe. I actually prefer a shallow quiche to a deep one!

My second favourite is broccoli and cheddar - grate the broccoli and fry with shallots to help cook out some of the moisture before adding to a quiche.
