What can I do with a load of parsnips?

I got half a dozen parsnips in my veg box today. The rest of the veg box was Mediterranean veg so thats what I'm basic all my dishes on this week.

What can I do with the parsnips? We have had loads of parsnips in roast veg recently and I am fed up of that now but I'm out of ideas!

Will soup be too bland/sweet? Can I use pesto or blue cheese to liven it up? Also, does anyone have a full proof recipe?

Ideas welcome - TIA :)

I love soup and Parsnips are one of my favourite veg. There are some fab ideas from other posters so my tips may be boring compared. Personally I am not a fan of spice with parsnips in soup so I tend to use them like when I make basic veg soup so roast the veg
Then I tend to fry up either chopped pancetta/bacon or chorizo till extra crispy and sprinkle on top of the soup. Sometimes if I have pesto I drizzle some of the oil on top of the soup instead.

I can't believe you've posted this as was just wondering the same thing - I've got loads left in my garden that I need to use up.

I can't believe there is so much to do with a parsnip! I usually just roast them with carrots and serve with roast chicken.

I will be experimenting with the recipes - thank you all so much!

I love curried parsnip and apple soup. @Jijithecat ‘s soup, from the Hairy Bikers, also looks delicious.

Ham and parsnip gratin is also a family favourite, if made with good ham.

Parsnips Molly Parkin is one of my favourites.

I've also made the spicy parsnip soup that someone linked above from Good Food, it's on my list this week, in fact, it's lovely.

Jamie Oliver has a parsnip, pancetta and parmesan pasta recipe which is really nice and that combo makes a good risotto too.

Do NOT make parsnip wine. My great grandmother used to and it had a bouquet and flavour reminiscent of the rougher types of antifreeze.

Heh! I do make parsnip stout. In fact, I'm drinking one right now, as it goes. I make it regularly (I brew 'proper' beer as well).
