Quick veggie fajitas

Not haute cuisine, but these are quick, tasty, and nutritious, and kids (should) love them.

Drain a tin of red kidney beans, rinse well in a colander under the running tap and drain. Roughly mash them (a fork is better than a masher) and put into a heavy pot on the hob. Bung in a tin of ratatouille (Tesco sell it), and two handfuls of porridge oats. Add a glug of olive oil. Season to taste with salt, black pepper, chilli flakes, piri-piri, etc. Cover and turn heat to low. Cook for ten mins or so until the oats are cooked, stirring occasionally with a spatula.

Then take your wrap, bung some of the mix in, add some grated cheese, and roll it up, and cook in your microwave for however long your microwave takes for this sort of thing. Serve with soured cream. Makes enough for maybe four or five fajitas.

I’m sorry but you lost me at two handfuls of porridge oats. 😳

We make fajitas quite regularly. I’m ne onion and one pepper and a tin of beans does it.

If I were make quick veggie fajitas, I would just slice field mushrooms, peppers and onions into long strips, season with what ever spices you like in fajitas and fry or sub the mushrooms for haloumi. Add to wraps with salsa, sour cream and guacamole, maybe with some grated cheese if not using haloumi.

If I wanted beans I'd make a mixed bean salad with lime and coriander to have on the side.

Equally quick veggie fajitas with no need for ratatouille porridge!

I do something similar but without the oats.
I find leftover cooked veg and some baked beans, piri-piri sauce and a bit of cheese wrapped and heated through in the microwave tasty and filling. They're not fajitas though.

It’s an odd way of complicating something very simple 😂

as per pp, onion, peppers, mushrooms. I usually chuck in kidney beans. Add seasoning, job done.
