Mine: “Salmon pasta”

  • salmon fillets (already poached if I’m being lazy), broken up and stirred into:
  • pasta, boiled, drained, stirred with pesto, cream, pepper and garlic/onion if I’m not in a super hurry
  • broccoli florets/peas.
  • flourish of rocket on the top for DH and I

Please share your favourite 20 min family dishes with me. I’m in a rut! Too much bolognese/fajita and pizza in our lives.

tonight I’m going to see if fussy DD will like a simple pea and ham risotto.

I do chicken or prawn satay. Its absolutely delicious!

1 onion, 1 pepper, 1 tablespoon crunchy peanut butter and 1 tablespoon of Jimmys satay sauce (amazon - lasts ages) mix with a small amount of coconut milk (half a tin), a bit of palm sugar, a few drops of fish sauce. Add chicken (cooked) or prawns, pineapple, cucumber and red chilli/coriander. Serve with rice

Not 20mins as it's slow cooker but only about 5mins prep.
Chicken korma to serve 4
3 chicken breasts diced, 2 onions diced, 2 peppers diced, 100g frozen green beans, 2 tablespoons ginger paste, 6 tablespoons of pataks korma paste, 250ml coconut milk, 200ml stock, 4 tablespoons ground almonds.

Put it all in slow cooker on low for 8 hours

Chickpea & spinach curry

use curry paste and fry off chopped onion, add two tins of chickpeas, tin of chopped tomatoes and stir, simmer for 10 minutes and chuck in handfuls of spin h to wilt into the cyrry

you can swap the tinned tomato for coconut milk instead

classic smoked haddock kedgeree with boiled eggs always guaranteed empty plates when I was growing up, now it is my go to comfort-but-I-can-tell-myself-it's-healthy food.

Chop a shallot and fry in a little oil. When soft add rice and a couple of teaspoons of curry powder, stir. Add boiling water to cover the rice plus about 2cm above, cover and cook for about 12 minutes. In the meantime, cook the natural smoked haddock (in the microwave for 4 minutes) and eggs. At the end of the cooking time make sure the water has been absorbed by the rice, add eggs, fish and a knob of butter. Stir through and leave for a couple of minutes for it all to heat through together.

Going on your salmon and pasta.
Try salmon mac and cheese.
So just get your dish and before you pour in your mac and cheese for the oven cook,lay some salmon fillets along the bottom and then pour the mac over,cheesegrated on top as usual andcook.its a gorgeous dish.

Watching with interest!

I’ve relied a lot on this one a lot recently

Tesco meatball beetroot and lentil bake

Also - put a camembert in a large baking dish and surround with a punnet of cherry tomatoes, halved. Mix in some pesto with the cherry toms. Bake for 20m at 170 and serve with cooked pasta. Feeds two but easily scaled up.

Let me know how it goes down. It's my DD1 favourite dinner. I would definitely be looking at slow cooker stuff if you have one- so much easier to be able to get it all on in the morning and just microwave some rice and serve at dinner time

DS loved the easy risotto last night, but DD turned her nose up 🤨

  • 2l chicken stock
  • one pack risotto rice
  • one onion diced
  • one pack smoked bacon, chopped
  • frozen peas
  • pepper/Parmesan to serve

fry off onion and bacon until cooked. Add some of the stock, then all the rice, then top up with stock and stir. Cover, let simmer, stirring occasionally, for 25 mins. Add peas for last three mins.

Prawn stir fry

pak Choi
mushrooms
spring onion
pack of chopped veg

then a little sweet chilli (I buy the prawns frozen but prepared so very little preparation and feel healthy)

mot sometimes I buy the chicken sliced (eg chicken tikka and just add that it last ) microwave rice if I want that
