What is the recipe you always go back to?

For me are some Romanian Sausages called "Mici" or " Mititei ". I want to try out as many good recipes so please share your thoughts on this one. Put links and/or recipes in the comments in possible. Thank you.

And if you are curious about Romanian Sausages this is an authentic recipe:

Ingredients:

● 1 kilogram and a half or 3.3 pounds of ground beef.
● 1 kilogram and a half or 3.3 pounds of minced pork meat.
● 750 ml or 25 fluid ounces of stock beef.
● 3 teaspoons of baking soda.
● 1 tablespoon of ground pepper.
● 5 cloves of smashed garlic.
● 2 tablespoons of dried thyme, if u have fresh even the better.
● 1 tablespoon of salt, careful with the salt because the stock beef is
already salted.
● 1 tablespoon of spicy paprika.
Optional you could add allspice if you like the flavor, and spicy pepper
flakes.

And this is the full tutorial on how to do it:

Mine is very simple - pork chop tray bake
I cut new potatoes in half, add courgette, onions, peppers and then place the chops on top and roast (sometimes in honey and sometimes in bbq seasoning)

I roast for an hour or so in a tin and it’s easy and quick - sometimes I add frozen peas in at the end

Chicken thigh (skin on, bone in), potato, chorizo, pepper and red onion tray bake with thyme, garlic and orange zest. Never disappoints.

A couple of others are green macaroni and cheese (Jamie Oliver) and a Turkey mince keema pie.

Tessa Kiros' Finnish meatballs. They are ridiculously simple and so so delicious. Like ikea meatballs but a million times better! I make huge batches of them, roll them and freeze them so they just need to be defrosted and cooked for a quick dinner.

Madhur Jaffrey's falafel recipe. So good we normally make a double or triple batch.

This recipe Hairy Bikers sausage casserole which I am making for dinner tonight. I change it a bit, sometimes add tinned green lentils, or new potatoes. It's always well received

Epicnoob · 16/03/2023 02:27

@BarrelOfOtters doing it tomorrow, looks very very tasty. Thanks. And thanks to everyone. I will come back to this thread whenever I don't know what to cook.

Quick and easy - Seafood Chowder with brown bread and butter. I prefer to use diced chorizo over rashers but it's my go-to. I'll always have a pack of fish mix and prawns in the freezer.

Similarly Spaghetti Carbonara is my emergency dinner. I've pancetta in the freezer but also the grated parmesean and pecorino romano in there as well. Decant what you need and it defrosts quickly.

Jamie Oliver's ultimate Mac & Cheese with pancetta breadcrumbs is delicious. We made that for the first time last week. That's another one I could probably use the frozen cheese and pancetta for.

Lately I've been chucking lamb shanks in the slow cooker with a red wine and garlic stock /roux and it's effortless.

Jambalya, Kedgeree, curries are all family favourites here.
