Make ahead salads

Looking for easy cheapish make ahead salads. Something that cam last a couple of days in the fridge. Maybe quinoa or rice based, not too high in calories

I love this chickpea salad. It's very simple to make, I often make it on a Sunday and keep it for lunches during the week:

I wondered about roasting veg. This isn't my main meal and I need to leave coffee space

I purchased the Happy Salad book by Leon last month, it is packed with delicious recipes. I can highly recommend it.

Some better than others. There is a shredded sprout salad with kale, lardons, dried cranberries, I used cabbage instead of sprouts, that kept really well and was delicious. Spinach, chickpea and almond, easy to prepare, kept well and tasty. Red cabbage, bacon and goats cheese, I’ve made this twice, it kept in the fridge for two days. I’ve been wanting to eat healthier and this book has helped massively. I make up two a week and that does 5 x lunches and 3 evening meals. So easy and hugely satisfying!

Ime the whole point about salad is that it is fresh that day/freshly prepared, so I would never make ahead.

But I just wanted to comment on your thread OP and warn you not to cook rice and use in another dish several days away. Rice is a major cause of food poisoning. It has a specific toxin that develops very quickly and is not killed by reheating and certainly not by storing in a fridge and eating 3 days later. It's very dangerous.

I have to leave the house at half six two to three days on The trot. Prepped salads at that time doesn’t appeal but i definitely need to sort my diet out a bit. I'd also like to leave options for DS (sn) that aren't limited to peanut butter sandwiches.

I'll bear that in mind about rice but in all honesty I'm likely to swap rice for quinoa or bulger wheat anyway

I'm lazy and buy the ready cooked pouches of grains from Aldi
Add roasted veg
Fresh stuff like grated carrot, cucumber, spring onions, a few crispy onions
Feta/goats cheese for flavour
Roasted chicken for protein

If you make the roasted veg, fresh stuff in advance the keep in separate tubs you can just assemble

Leon salads are fabulous and keep very well in the fridge. Their tuktuk salad looks complicated but is easy. I omit the seeds and ramp up the chillies.
