Good winter/spring recipes using miso?

I've never used miso but got really into Rukmini Iyer's aubergine / tofu with miso this summer & that real savoury flavour. I've been doing something similar with leeks / squash / tofu rubbed in the same mix as a winter time alternative. Would love to hear any other good recipes - I'm a fairly lazy cook, don't mind if they take time in the oven/on the hob, but ideally not too faffy to make.

Unfortunately parsnips are the one vegetable I hate.... do you think carrots would work done the same way? love roast carrots

Yes, it works with carrots, sweet potato and any veg with a strong flavour. You can also add a small amount to stews, casseroles and Thai curries. If you are really stuck for stock, add it to boiling water for an instant one. I use it in place of salt or soy sauce.

I love miso. it's delicious and so good for you. In general if you are adding it to liquid meal, add it last after the pots taken off the heat so that the good bacteria in it aren't killed off by the boiling.

Miso soup is an amazing side dish and so easy to make. Boil water with your stock (I use a vegetarian dashi powder, but fish is more traditional), add vegetables/tofu to it (spinach and spring onion is my favourite, but I'll add anything which needs using up) and when done remove from the heat and stir in miso paste through a strainer. It feels nourishing.

Marion's Kitchen's miso braised aubergine is simple and delicious.

Miso butter greens pasta is also simple to make (if you have a blender) and much tastier than the ingredient list suggests.

I'll also recommend the Ottolenghi salad upthread which is one of my favourite salad recipes.

Ramen as others have said - but if you can't be bothered to make the broth from scratch you can buy itsu in supermarkets and then add the tare or just some miso.

Ottolenghi and Belfrage are big miso fans so have a Google for more ideas!

My favourite office lunch involves quick udon noodles, some salmon or tofu or gyoza, edamame and peas, a little seaweed and a spoonful of miso. Pop them all in a pot (I keep a stash in the freezer), then when you're ready to eat top up with boiling water and give it 4 mins in the microwave.

This Ottolenghi traybake ragu is lovely. Needs lots of time in the oven but prep is really quick if you’ve got a food processor.

The chicken is delicious as well! The leftovers made really nice sandwiches too, as the kimchi gives a spicy coleslaw effect.
